The range of cutters includes both single stage and twin rollers (one embossing and one cutting roller) used for cutting a laminated dough sheet. A lot of attention must be paid to the cutting sizes which must compensate the elasticity of the dough sheet, and its tension and shrinkage. They are made with  non-toxic materials complying with food regulations and in particular they have a bronze body which can be or not teflonized and / or plastic material. Rotary cutters have a particular geometry on which we can recognize staggered or straight rows, pitch of engravings, distance to distance specially designed to exploit the surface of the roller as much as possible, but in respect of the distance to avoid sticking of the products to each other. Beside, special attention is paid to the scrap return which must be as less as possible, but strong enough to avoid breaking during process. The construction can be with interchangeable rings, or interchangeable cups, or solid construction, all customized solutions based on single needs. The rotary cutter is meant to be the heart of the process, while its cavity is meant to be the heart of the cutter. Very important topics are: radius, cutting height and release angle to have a perfect cut of the single pieces, a perfect definition of the embossing, but at the same time to avoid to have too much pressure which might generate a premature wear of the belt. Also the configuration of docker pins is important to avoid bubbles on the surface of the biscuit.


The construction can be at interchangeable rings or interchangeable cups (usually with some spare parts included)  or solid construction: interchangeable rings/cups offer more flexibility: in case of accident you can easily replace the damaged piece with the spare one; in case of new product to be tested, the trials can be done directly in production for a 100% sure test in terms of release, weight, thickness, dimensions…

We can identify two types of rotary cutters:

Single stage rotary cutters

Single stage rotary cutter is recommended for simple products without details (Ritz, Agua), while it is preferable to have twin cutters in the case of products with many details (special Petit Beurre, Marie, Zoology) for better performance and release. In addition, the twin cutters allow greater flexibility in terms of sheet thickness, providing for the possibility of adjusting the gap between embossing roller and cutting roller, which would not be possible with a single stage rotary cutter where it is necessary to know the thickness of the dough sheet from the beginning in order to accurately design the cutting thickness or cutting height.

Last but not least, the twin cutters allows you to make different products, using the same cutting roller and possibly providing different embossing rollers based on the different engravings you want to make.
